Where we are now and where we anticipate being in 2021….
As I sit here at the vineyard surrounded by dirt and a light peaceful breeze, I am in awe as to just how much has been done is such a short period of time. As tasks are checked off our list the excitement to share the serenity we have created here at Serendipity Cellars grows, however, we are quickly reminded there are still some pretty big items to complete. We do have the approval of our conditional use permit pending all conditions are met, i.e. septic, power and paving the entry way, which we are working on diligently.
In the meantime, harvest has been quite the experience in what has become to be known as the “shit shed”. The “shit shed” is the very small shed we have been bonded on to make wine this year as we complete the items to finalize the actual winery building. The equipment and barrels are just beautiful, but the shed itself lacks a little of the farmhouse industrial style we are creating in the actual winery building. But the aroma, ohhhh the aroma is so pleasing and satisfying. The Sauvignon Blanc is providing an aroma of guava and other tropical fruits while the Vermentino makes you feel like your basking in a bowlful of citrus and melons. Zinfandel and Tempranillo are still in the fermentation process, but the juice is a deep and rich burgundy which makes my very talented husband aka “winemaker” extremely happy. We still have Chardonnay, Cabernet Sauvignon and Sangiovese to harvest.
The question is often asked, what are the plans for next year? We anticipate opening the doors for wine tasting only in June of 2021. The wines which will be showcased are the Vermentino, Sauvignon Blanc, Chardonnay and Sangiovese Rose. Reds will not be available until 2022. We will be taking reservations for up to (4) weddings in 2022 along with other private party events. In 2022 we will begin our wine club, wine club dinners amongst other fun events we are excited about. In the meantime, we are working diligently on completing the landscape around the winery building and the interior of the winery building.
